Pork Carnitas

Ingredients

  • 🐖 Pork shoulder – 3-4 lbs, cut into chunks
  • 🍊 Orange – 1, juiced
  • 🍋 Lime – 1, juiced
  • 🧅 Onion – 1, quartered
  • 🧄 Garlic – 4 cloves, smashed
  • 🌿 Bay leaves – 2
  • 🧂 Salt – to taste
  • 💧 Water – enough to cover pork

Instructions

  • 🔥 In a large pot or Dutch oven, combine pork, orange juice, lime juice, onion, garlic, bay leaves, salt, and water.
  • ♨️ Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours, or until the pork is very tender and easily shredded.
  • ⬆️ Remove pork from the pot and shred with two forks. Discard the onion, garlic, and bay leaves.
  • ♨️ In a large skillet, heat some of the cooking liquid over medium-high heat. Add the shredded pork and cook, turning occasionally, until browned and crispy on all sides.
  • 🌮 Serve carnitas in tacos, burritos, or bowls with your favorite toppings.
