Pork Bone Soup

Ingredients
- 🍖 Pork bones – 2 lbs
- 🧅 Onion – 1, quartered
- 🧄 Garlic – 4 cloves, crushed
- 🌿 Ginger – 1 inch piece
- 🍶 Soy sauce – 2 tbsp
- 🌶️ Gochujang – 1 tbsp (optional)
- 🥬 Napa cabbage – 1/4 head, chopped
- 🍄 Mushrooms – 1 cup, sliced
- 💧 Water – 8 cups
- 🧂 Salt – to taste
- 🌱 Green onions – for garnish
Instructions
- 💧 Rinse pork bones thoroughly and soak in cold water for 30 minutes.
- ♨️ Bring water to a boil, add pork bones, onion, garlic, and ginger. Simmer for 1.5 - 2 hours, skimming off any scum.
- 🍲 Remove pork bones and strain broth. Return broth to pot.
- 🥬 Add Napa cabbage and mushrooms. Cook until tender.
- 🍖 Add soy sauce, gochujang (if using), and salt to taste. Return pork bones to the soup. Garnish with green onions and serve hot.
