Ingredients
- 🍚 Poha (flattened rice) – 1 cup
- 🧅 Onion – finely chopped
- 🌿 Curry leaves – 8-10
- 🌶️ Green chilies – 1-2, chopped
- 🥜 Peanuts – 2 tbsp
- 🍋 Lemon juice – 1 tsp
Instructions
- 🍚 Rinse poha gently and set aside to soften.
- 🔥 Heat oil in a pan, add peanuts and sauté until golden.
- 🧅 Add mustard seeds, curry leaves, green chilies and onion. Sauté until onions are translucent.
- 🧂 Add turmeric powder and salt. Mix well.
- 🍚 Add the softened poha and mix gently. Cook for 2-3 minutes.
- 🍋 Squeeze lemon juice and garnish with coriander leaves. Serve hot.
