Ingredients

  • 🍚 Poha (flattened rice) – 1 cup
  • 🧅 Onion – finely chopped
  • 🌿 Curry leaves – 8-10
  • 🌶️ Green chilies – 1-2, chopped
  • 🥜 Peanuts – 2 tbsp
  • 🍋 Lemon juice – 1 tsp

Instructions

  • 🍚 Rinse poha gently and set aside to soften.
  • 🔥 Heat oil in a pan, add peanuts and sauté until golden.
  • 🧅 Add mustard seeds, curry leaves, green chilies and onion. Sauté until onions are translucent.
  • 🧂 Add turmeric powder and salt. Mix well.
  • 🍚 Add the softened poha and mix gently. Cook for 2-3 minutes.
  • 🍋 Squeeze lemon juice and garnish with coriander leaves. Serve hot.
