Pesto Mushroom Sandwich

Ingredients

  • 2 slices of bread 🍞
  • 4 oz sliced mushrooms 🍄
  • 2 tbsp pesto 🌿
  • 1 tbsp olive oil 🫒
  • 1 clove garlic, minced 🧄
  • 2 slices provolone cheese 🧀
  • Salt 🧂 and pepper
  • Optional: Arugula or spinach 🥬

Instructions

  • Heat olive oil in a skillet over medium heat. 🔥
  • Add minced garlic and sauté for 30 seconds until fragrant. 🧄
  • Add sliced mushrooms to the skillet and cook until softened and browned, about 8-10 minutes. Season with salt and pepper. 🍄
  • Spread pesto on both slices of bread. 🌿
  • Place provolone cheese on one slice of bread. 🧀
  • Top with cooked mushrooms. 🍄
  • Add arugula or spinach if using. 🥬
  • Cover with the other slice of bread. 🍞
  • Optional: Grill the sandwich in a panini press or skillet until golden brown and cheese is melted. 🥪
  • Serve immediately and enjoy! 🎉
