Pesto Mushroom Sandwich

Ingredients
- 2 slices of bread 🍞
- 4 oz sliced mushrooms 🍄
- 2 tbsp pesto 🌿
- 1 tbsp olive oil 🫒
- 1 clove garlic, minced 🧄
- 2 slices provolone cheese 🧀
- Salt 🧂 and pepper
- Optional: Arugula or spinach 🥬
Instructions
- Heat olive oil in a skillet over medium heat. 🔥
- Add minced garlic and sauté for 30 seconds until fragrant. 🧄
- Add sliced mushrooms to the skillet and cook until softened and browned, about 8-10 minutes. Season with salt and pepper. 🍄
- Spread pesto on both slices of bread. 🌿
- Place provolone cheese on one slice of bread. 🧀
- Top with cooked mushrooms. 🍄
- Add arugula or spinach if using. 🥬
- Cover with the other slice of bread. 🍞
- Optional: Grill the sandwich in a panini press or skillet until golden brown and cheese is melted. 🥪
- Serve immediately and enjoy! 🎉
