Ingredients
- 250g all-purpose flour 🌾
- 250g unsalted butter 🧈, chilled
- 125ml ice water 🧊
- 500ml milk 🥛
- 250g granulated sugar 🍚
- 6 large egg yolks 🥚
- 2 tbsp all-purpose flour 🌾
- 1 lemon 🍋, zest only
- 1 cinnamon stick 🪵
- Powdered sugar (for dusting) ❄️
- Ground cinnamon (for dusting) 🍂
Instructions
- Make the dough: Combine flour and salt in a bowl. Add chilled butter and rub it into the flour until it resembles coarse crumbs. Gradually add ice water and mix until the dough comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes. ⏳
- Make the custard: In a saucepan, heat milk, sugar, lemon zest, and cinnamon stick. Bring to a simmer. 🔥
- In a bowl, whisk egg yolks and flour until smooth. 🥚
- Temper the egg mixture by slowly pouring a little of the hot milk mixture into it, whisking constantly. Then, pour the tempered egg mixture back into the saucepan with the remaining milk mixture. 🥣
- Cook over medium heat, stirring constantly, until the custard thickens. Remove from heat and discard lemon zest and cinnamon stick. Let cool slightly. 🌡️
- Preheat oven to 250°C (480°F). 🔥
- Roll out the chilled dough on a lightly floured surface. Fold it into thirds like a letter and roll it out again. Repeat this process 5-6 times. ✉️
- Roll out the dough thinly and cut out circles using a cookie cutter. 🔪
- Press the dough circles into muffin tins, shaping them to fit snugly. Fill each with custard, leaving a little space at the top. 🥧
- Bake for 15-20 minutes, or until the pastries are golden brown with dark spots. 👀
- Let cool slightly before removing from the muffin tins. Dust with powdered sugar and cinnamon before serving. ✨
