Ingredients

  • 🥬 Spinach – 1 lb, chopped
  • 🧅 Onion – 1 medium, chopped
  • 🥚 Eggs – 6 large
  • 🧀 Ricotta cheese – 1 cup
  • 🌿 Fresh herbs – Parsley, basil, to taste
  • 🥧 Pie crust – 2 sheets
  • 🧀 Parmesan cheese – Grated, for topping

Instructions

  • 🔥 Sauté onion and spinach until wilted. Let cool.
  • 🥣 Mix spinach mixture with ricotta, eggs, herbs, salt, and pepper.
  • 🥧 Line a pie dish with one pie crust. Pour in spinach mixture.
  • 🥚 Make small indentations and crack remaining eggs into them.
  • 🥧 Cover with second pie crust, crimp edges, and bake at 375°F (190°C) for 45 minutes or until golden brown.
