Ingredients
- 1 tbsp olive oil 🫒
- 1 onion, finely chopped 🧅
- 2 carrots, finely chopped 🥕
- 2 celery stalks, finely chopped
- 500g beef mince 🥩
- 200g pork mince 🐷
- 150g pancetta, finely chopped
- 2 cloves garlic, minced 🧄
- 1 glass (125ml) dry red wine 🍷
- 400g can chopped tomatoes 🍅
- 2 tbsp tomato paste 🍅
- 500ml beef stock 🍲
- 200ml whole milk 🥛
- 1 tsp dried oregano
- Salt and pepper to taste 🧂
- 500g pasta 🍝
Instructions
- Heat the olive oil in a large, heavy-based pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 10 minutes. ⏳
- Add the beef mince, pork mince, and pancetta to the pot and cook, breaking it up with a spoon, until browned all over. 🥄
- Add the garlic and cook for another minute.🧄
- Pour in the red wine and let it simmer until reduced by half, scraping up any browned bits from the bottom of the pot. 🍷
- Stir in the chopped tomatoes, tomato paste, beef stock, milk, and oregano. Season with salt and pepper. 🍅🥛
- Bring to a simmer, then reduce the heat to low, cover, and cook for at least 3 hours, or up to 5 hours, stirring occasionally. The longer it simmers, the richer the flavor will be. 🔥
- Cook the pasta according to package directions. 🍝
- Serve the bolognese sauce over the pasta. Optionally garnish with Parmesan cheese. 🧀
