Ingredients

  • 1 tbsp olive oil 🫒
  • 1 onion, finely chopped 🧅
  • 2 carrots, finely chopped 🥕
  • 2 celery stalks, finely chopped
  • 500g beef mince 🥩
  • 200g pork mince 🐷
  • 150g pancetta, finely chopped
  • 2 cloves garlic, minced 🧄
  • 1 glass (125ml) dry red wine 🍷
  • 400g can chopped tomatoes 🍅
  • 2 tbsp tomato paste 🍅
  • 500ml beef stock 🍲
  • 200ml whole milk 🥛
  • 1 tsp dried oregano
  • Salt and pepper to taste 🧂
  • 500g pasta 🍝

Instructions

  • Heat the olive oil in a large, heavy-based pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 10 minutes. ⏳
  • Add the beef mince, pork mince, and pancetta to the pot and cook, breaking it up with a spoon, until browned all over. 🥄
  • Add the garlic and cook for another minute.🧄
  • Pour in the red wine and let it simmer until reduced by half, scraping up any browned bits from the bottom of the pot. 🍷
  • Stir in the chopped tomatoes, tomato paste, beef stock, milk, and oregano. Season with salt and pepper. 🍅🥛
  • Bring to a simmer, then reduce the heat to low, cover, and cook for at least 3 hours, or up to 5 hours, stirring occasionally. The longer it simmers, the richer the flavor will be. 🔥
  • Cook the pasta according to package directions. 🍝
  • Serve the bolognese sauce over the pasta. Optionally garnish with Parmesan cheese. 🧀
