Ingredients
- 🥩 Beef or Lamb – 1 kg, bone-in
- 🧅 Onions – 2 large, sliced
- 🧄 Ginger-Garlic Paste – 2 tbsp
- 🌶️ Nihari Masala – 4 tbsp (store-bought or homemade)
- 🌾 Whole Wheat Flour – for Kulcha dough
- 🥛 Milk – for Kulcha dough
- 🌿 Cilantro – for garnish
- 🍋 Lemon wedges – for serving
Instructions
- 🔥 Brown meat in a pot with oil, then add onions and ginger-garlic paste and sauté.
- 🌶️ Add Nihari masala and sauté well. Add water and simmer for 2-3 hours until the meat is very tender.
- 🍞 Prepare Kulcha dough with wheat flour, milk, and a pinch of salt. Roll out into circles and cook on a hot griddle until golden brown.
- 🥣 Thicken Nihari gravy with flour slurry if needed. Garnish with cilantro.
- 🍽️ Serve hot Nihari with Kulcha, garnished with lemon wedges.
