Ingredients

  • 🥩 Beef or Lamb – 1 kg, bone-in
  • 🧅 Onions – 2 large, sliced
  • 🧄 Ginger-Garlic Paste – 2 tbsp
  • 🌶️ Nihari Masala – 4 tbsp (store-bought or homemade)
  • 🌾 Whole Wheat Flour – for Kulcha dough
  • 🥛 Milk – for Kulcha dough
  • 🌿 Cilantro – for garnish
  • 🍋 Lemon wedges – for serving

Instructions

  • 🔥 Brown meat in a pot with oil, then add onions and ginger-garlic paste and sauté.
  • 🌶️ Add Nihari masala and sauté well. Add water and simmer for 2-3 hours until the meat is very tender.
  • 🍞 Prepare Kulcha dough with wheat flour, milk, and a pinch of salt. Roll out into circles and cook on a hot griddle until golden brown.
  • 🥣 Thicken Nihari gravy with flour slurry if needed. Garnish with cilantro.
  • 🍽️ Serve hot Nihari with Kulcha, garnished with lemon wedges.
