Ingredients

  • 🥦 Cauliflower – cut into florets
  • 🧅 Onion – chopped
  • 🍅 Tomatoes – pureed
  • 🧄 Ginger-garlic paste – 1 tbsp
  • 🌶️ Green chilies – slit
  • 🌿 Curry leaves – a few
  • 🌶️ Red chili powder – 1 tsp
  • 🌱 Turmeric powder – 1/2 tsp
  • 🌿 Coriander powder – 1 tsp
  • 🧂 Garam masala – 1/2 tsp
  • 🌿 Fresh coriander – for garnish
  • 🥄 Oil – for cooking
  • 🧂 Salt – to taste

Instructions

  • 🔥 Heat oil in a pan and add curry leaves, green chilies, and onions. Sauté until golden brown.
  • 🧄 Add ginger-garlic paste and sauté for a minute.
  • 🍅 Add tomato puree and cook until oil separates.
  • 🌶️ Add red chili powder, turmeric powder, coriander powder, and salt. Sauté for a minute.
  • 🥦 Add cauliflower florets and mix well. Cover and cook until tender.
  • 🧂 Sprinkle garam masala and garnish with fresh coriander. Serve hot with rice or roti.
