Ingredients
- 🐑 Mutton – 1 kg, bone-in
- 🍚 Basmati Rice – 500g, soaked
- 🧅 Onions – 2 large, chopped
- 🍅 Tomatoes – 3 medium, diced
- 🧄 Garlic – 4 cloves, minced
- 🌶️ Green chilies – 2-3, slit
- 🌿 Mandi spice mix – 3 tbsp
- 💧 Oil – for cooking
- 🍋 Lemon – for serving
- 🌱 Fresh coriander – for garnish
Instructions
- 🔥 Heat oil in a large pot, add onions and sauté until golden brown.
- 🐑 Add mutton and sauté until browned on all sides. Add garlic, green chilies, and tomatoes. Cook until tomatoes soften.
- 🌿 Add Mandi spice mix and water (about 6 cups). Bring to a boil, then reduce heat and simmer until mutton is tender (about 1 hour).
- 🍚 Remove mutton and set aside. Add soaked rice to the broth. Cook until rice is done and has absorbed the liquid.
- 🐑 Place the cooked mutton on top of the rice. Cover and let it rest for 10 minutes. Garnish with fresh coriander and serve with lemon wedges.
