Ingredients
- 🍚 Basmati Rice – 2 cups
- 🐑 Mutton – 1 kg, cut into pieces
- 🧅 Onions – 3 large, thinly sliced
- 🧄 Ginger-Garlic Paste – 2 tbsp
- 🌶️ Green Chilies – 4-5, slit
- 🌿 Mint Leaves – handful, chopped
- 🌱 Coriander Leaves – handful, chopped
- 🥛 Yogurt – 1 cup
- 🥄 Biryani Masala – 3 tbsp
- 🌼 Saffron – a few strands soaked in milk
- 🧈 Ghee – 4 tbsp
- 🧂 Salt – to taste
Instructions
- 🐑 Marinate mutton with yogurt, ginger-garlic paste, and biryani masala. Refrigerate for at least 2 hours.
- 🍚 Soak basmati rice for 30 minutes. Cook until 70% done.
- 🔥 In a heavy-bottomed pot, layer marinated mutton, rice, fried onions, mint, and coriander leaves.
- 🌼 Drizzle saffron milk and ghee over the layers.
- 🥘 Cover and cook on low heat (dum) for 45-60 minutes, or until mutton is tender and rice is fully cooked. Serve hot!
