Mutton Biryani

Ingredients

  • 🍚 Basmati Rice – 2 cups
  • 🐑 Mutton – 1 kg, cut into pieces
  • 🧅 Onions – 3 large, thinly sliced
  • 🧄 Ginger-Garlic Paste – 2 tbsp
  • 🌶️ Green Chilies – 4-5, slit
  • 🌿 Mint Leaves – handful, chopped
  • 🌱 Coriander Leaves – handful, chopped
  • 🥛 Yogurt – 1 cup
  • 🥄 Biryani Masala – 3 tbsp
  • 🌼 Saffron – a few strands soaked in milk
  • 🧈 Ghee – 4 tbsp
  • 🧂 Salt – to taste

Instructions

  • 🐑 Marinate mutton with yogurt, ginger-garlic paste, and biryani masala. Refrigerate for at least 2 hours.
  • 🍚 Soak basmati rice for 30 minutes. Cook until 70% done.
  • 🔥 In a heavy-bottomed pot, layer marinated mutton, rice, fried onions, mint, and coriander leaves.
  • 🌼 Drizzle saffron milk and ghee over the layers.
  • 🥘 Cover and cook on low heat (dum) for 45-60 minutes, or until mutton is tender and rice is fully cooked. Serve hot!
