Mushroom curry

Ingredients
- ๐ Mushrooms โ 250g, cleaned and sliced
- ๐ง Onion โ 1 large, finely chopped
- ๐ Tomatoes โ 2 medium, diced or pureed
- ๐ง Ginger-Garlic Paste โ 1 tbsp
- ๐ฟ Spices โ Turmeric, chili powder, and garam masala
- ๐งด Cooking Oil โ 2 tbsp
- ๐ Fresh Coriander โ small handful, chopped
Instructions
- ๐ฅ Heat oil in a pan and sautรฉ onions until they become soft and golden brown.
- ๐ Add ginger-garlic paste and tomatoes, cooking until the mixture softens.
- ๐ง Stir in the dry spices and salt, cooking for two minutes to release aromas.
- ๐ฅ Fold in the mushrooms and a splash of water, simmering until tender.
- โจ Garnish with fresh coriander and serve hot with rice or flatbread.
