Ingredients
- 🌱 1 cup dried chickpeas, soaked overnight
- 🍋 1/4 cup lemon juice, freshly squeezed
- 🧄 2 cloves garlic, minced
- 🥄 1/2 cup tahini
- 💧 2-4 tablespoons ice water
- 🧂 Salt to taste
- 🫒 Olive oil for drizzling
- 🌶️ Optional: Paprika for garnish
Instructions
- ♨️ Boil chickpeas until very tender, about 1-1.5 hours. Drain and reserve some cooking liquid.
- 🥣 In a food processor, combine tahini and lemon juice and process for 1 minute until creamy.
- 🧄 Add garlic and process for 30 seconds.
- 🌱 Add drained chickpeas and process until smooth. Gradually add ice water until desired consistency is achieved.
- 🧂 Season with salt to taste. If needed, add a little chickpea cooking liquid for extra creaminess.
- 🫒 Drizzle with olive oil and sprinkle with paprika (optional) before serving. Serve with pita bread or vegetables.
