Ingredients

  • 🍜 Udon noodles – 2 packs (fresh or frozen)
  • ⬜ Soft or Silken Tofu – 1 block, cut into cubes
  • 🥩 Ground pork or beef – 200g
  • 🫘 Doubanjiang (spicy bean paste) – 2 tbsp
  • 🧄 Garlic & Ginger – 1 tbsp each, minced
  • 🥣 Soy sauce & Sugar – 1 tsp each for balance
  • 🥢 Cornstarch slurry – 1 tbsp mixed with water
  • 🌿 Green onions – finely chopped for garnish

Instructions

  • 🍜 Cook udon noodles in boiling water until tender, then drain and set aside.
  • 🔥 Sauté garlic, ginger, and ground meat in a pan until the meat is fully browned.
  • 🌶️ Stir in the spicy bean paste, soy sauce, and a splash of water to create a sauce.
  • 🍲 Gently fold in the tofu cubes and simmer for 3 minutes, then add cornstarch slurry to thicken.
  • ✨ Toss the udon noodles into the spicy sauce, garnish with green onions, and serve hot.
