Ingredients

  • 🍆 Eggplant – cut into cubes
  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🌶️ Chili Bean Paste (Doubanjiang)
  • 🥢 Soy Sauce
  • 🍚 Cornstarch
  • 🟢 Green onions – chopped (for garnish)

Instructions

  • 🍆 Prepare eggplant and toss with cornstarch.
  • 🔥 Stir-fry eggplant until softened and lightly browned.
  • 🧅 Sauté garlic and onions, then add chili bean paste.
  • 🥘 Add eggplant back to the pan, stir in soy sauce and a little water.
  • ✨ Simmer until sauce thickens, garnish with green onions and serve hot with rice.
