Ingredients
- 🍆 Eggplant – cut into cubes
- 🧅 Onion – chopped
- 🧄 Garlic – minced
- 🌶️ Chili Bean Paste (Doubanjiang)
- 🥢 Soy Sauce
- 🍚 Cornstarch
- 🟢 Green onions – chopped (for garnish)
Instructions
- 🍆 Prepare eggplant and toss with cornstarch.
- 🔥 Stir-fry eggplant until softened and lightly browned.
- 🧅 Sauté garlic and onions, then add chili bean paste.
- 🥘 Add eggplant back to the pan, stir in soy sauce and a little water.
- ✨ Simmer until sauce thickens, garnish with green onions and serve hot with rice.
