Ingredients
- 500g Rice noodles (Mì quảng type)
- 500g Pork belly, sliced 🥓
- 200g Shrimp, peeled and deveined 🍤
- 1 tbsp Turmeric powder 💛
- 2 tbsp Fish sauce 🐟
- 1 tbsp Sugar 🍬
- 1 tsp Black pepper 🌶️
- 2 cloves Garlic, minced 🧄
- 1 Shallot, minced
- 2 tbsp Vegetable oil 🌻
- 500ml Chicken broth 🐔
- Hard-boiled eggs, halved 🥚
- Roasted peanuts 🥜
- Vietnamese coriander (rau răm)
- Green onions, chopped 🧅
- Rice crackers 🍘
- Lime wedges 🍋
- Chili sauce 🌶️
Instructions
- Marinate pork and shrimp with turmeric powder, fish sauce, sugar, pepper, garlic, and shallot for 30 mins. ⏳
- Heat vegetable oil in a pot. Add marinated pork and shrimp. Stir-fry until browned. 🔥
- Pour in chicken broth. Bring to a boil, then simmer for 30 mins. Reduce sauce. 🍲
- Cook rice noodles according to package instructions. Drain well. 🍜
- Divide noodles into bowls. Top with pork, shrimp, hard-boiled eggs, peanuts, coriander, and green onions. 🥣
- Ladle the broth over the noodles. Serve with rice crackers, lime wedges, and chili sauce. 🍽️
