Ingredients

  • 500g Rice noodles (Mì quảng type)
  • 500g Pork belly, sliced 🥓
  • 200g Shrimp, peeled and deveined 🍤
  • 1 tbsp Turmeric powder 💛
  • 2 tbsp Fish sauce 🐟
  • 1 tbsp Sugar 🍬
  • 1 tsp Black pepper 🌶️
  • 2 cloves Garlic, minced 🧄
  • 1 Shallot, minced
  • 2 tbsp Vegetable oil 🌻
  • 500ml Chicken broth 🐔
  • Hard-boiled eggs, halved 🥚
  • Roasted peanuts 🥜
  • Vietnamese coriander (rau răm)
  • Green onions, chopped 🧅
  • Rice crackers 🍘
  • Lime wedges 🍋
  • Chili sauce 🌶️

Instructions

  • Marinate pork and shrimp with turmeric powder, fish sauce, sugar, pepper, garlic, and shallot for 30 mins. ⏳
  • Heat vegetable oil in a pot. Add marinated pork and shrimp. Stir-fry until browned. 🔥
  • Pour in chicken broth. Bring to a boil, then simmer for 30 mins. Reduce sauce. 🍲
  • Cook rice noodles according to package instructions. Drain well. 🍜
  • Divide noodles into bowls. Top with pork, shrimp, hard-boiled eggs, peanuts, coriander, and green onions. 🥣
  • Ladle the broth over the noodles. Serve with rice crackers, lime wedges, and chili sauce. 🍽️
