Ingredients
- 🥔 Potatoes – diced
- 🥕 Carrots – chopped
- 🫑 Bell peppers – sliced
- 🧅 Onions – chopped
- 🥥 Coconut milk – 1 can
- 🌿 Curry leaves – 1 sprig
- 🌶️ Green chilies – to taste
- 🧄 Garlic – 2 cloves minced
- 🇮🇳 Indian spices (turmeric, cumin, coriander) – 1 tbsp
Instructions
- 🔥 Heat oil and add curry leaves and green chilies.
- 🧅 Sauté onions and garlic until golden brown.
- 🥔 Add potatoes, carrots, and bell peppers; cook for 10 minutes.
- 🇮🇳 Stir in Indian spices and cook for 2 minutes.
- 🥥 Pour in coconut milk and simmer until vegetables are tender.
- 🍚 Serve hot with rice or bread.
