Ingredients

  • 1 lb Italian sausage 🌶️ (sweet or hot)
  • 1 large onion 🧅, chopped
  • 2 cloves garlic 🧄, minced
  • 1 (28 ounce) can crushed tomatoes 🍅
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup chicken broth 🐔
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil 🌿
  • Salt and pepper to taste
  • 8 ounces ditalini pasta 🍝
  • Grated Parmesan cheese 🧀 for serving

Instructions

  • In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. ♨️ Drain off any excess grease.
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes. ⏱️
  • Stir in the crushed tomatoes, tomato sauce, cannellini beans, chicken broth, oregano, and basil. Season with salt and pepper. 🧂
  • Bring the mixture to a simmer and then reduce the heat to low. Cover and cook for 20 minutes, allowing the flavors to meld. 🥘
  • Add the ditalini pasta to the pot and cook according to package directions, usually about 10-12 minutes, or until the pasta is tender. 🍝
  • Stir occasionally to prevent sticking. If the soup becomes too thick, add a little more chicken broth. 🥣
  • Serve hot, garnished with grated Parmesan cheese. 🧀 Enjoy! 🎉
