Ingredients

  • 🥛 Heavy Cream – 600ml (double cream)
  • 🍬 Granulated Sugar – 150g
  • 🍋 Lemons – 3 large (juiced and zested)
  • 🌿 Fresh Mint – for garnish

Instructions

  • 🥘 Combine cream and sugar in a saucepan and bring to a gentle boil over medium heat.
  • ⏲️ Simmer the mixture for 3 minutes while stirring constantly to prevent overflow.
  • 🍋 Remove from heat and whisk in the fresh lemon juice and zest until smooth.
  • 🥣 Let the mixture cool for 5 minutes, then pour into small glasses or ramekins.
  • ❄️ Chill in the refrigerator for at least 3 hours until set and serve cold.
