Ingredients
- 4 large eggs 🥚
- 200g granulated sugar 🍬
- 200g unsalted butter 🧈
- 2 lemons 🍋 (zested and juiced)
Instructions
- Beat the eggs in a bowl 🥣.
- Add sugar and lemon zest to the eggs, mix well 🔄.
- Place the bowl over a pot of simmering water 💧 and cook, stirring constantly, until the mixture thickens.
- Remove from heat and add the butter, stirring until it's melted 🧈.
- Strain the mixture to remove any lumps 🕳️.
- Pour into sterilized jars and let it cool before refrigerating 🧊.
