Ingredients

  • 🥩 Lamb – 300g thinly sliced shoulder or leg
  • 🥖 Baguette or Ciabatta – 2 large rolls
  • 🧅 Red Onion – 1 medium, thinly sliced
  • 🌿 Rosemary – 1 sprig finely chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🥣 Dijon Mustard – 2 tbsp for spreading
  • 🥬 Arugula – 1 handful for freshness
  • 🧈 Butter – 1 tbsp for toasting

Instructions

  • 🔥 Heat a pan with a little oil and sear the lamb slices with garlic and rosemary until browned.
  • 🧅 Add onions to the pan and sauté until they are soft, sweet, and golden brown.
  • 🥖 Slice the bread rolls in half and toast them with butter until crispy and warm.
  • 🥪 Spread a generous layer of mustard on the bread, then pile on the warm lamb and onions.
  • ✨ Top with fresh arugula, close the sandwich, and slice in half to serve.
