Ingredients
- 4 Kuzu İncik (Lamb Shanks) 🍖
- 2 tbsp Olive Oil 🫒
- 1 large Onion, chopped 🧅
- 2 Carrots, chopped 🥕
- 2 Celery stalks, chopped
- 4 cloves Garlic, minced 🧄
- 1 tbsp Tomato Paste 🍅
- 1 tbsp Red Pepper Paste (optional)
- 1 cup Red Wine 🍷
- 4 cups Lamb or Chicken Broth 🍲
- 2 Bay Leaves 🍃
- 1 tsp Dried Thyme
- 1/2 tsp Dried Rosemary
- Salt 🧂 and Black Pepper 🌶️ to taste
- Fresh Parsley, chopped (for garnish) 🌿
Instructions
- Preheat oven to 320°F (160°C).🔥
- Season lamb shanks with salt and pepper.🧂🌶️
- Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.🫕
- Sear lamb shanks on all sides until browned. Remove from pot and set aside.🥩
- Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.🧅🥕
- Add garlic and cook for another minute.🧄
- Stir in tomato paste and red pepper paste (if using) and cook for 1 minute.🍅
- Deglaze the pot with red wine, scraping up any browned bits from the bottom.🍷
- Return lamb shanks to the pot. Place on top of vegetables.
- Pour in lamb or chicken broth, ensuring the shanks are mostly submerged. 🍲
- Add bay leaves, thyme, and rosemary.🍃
- Bring to a simmer, then cover the pot and transfer to the preheated oven.♨️
- Braise for 2.5-3 hours, or until the lamb is very tender and easily pulls away from the bone.⏰
- Remove from oven and let rest for 10-15 minutes before serving.🍽️
- Garnish with fresh parsley and serve with your favorite side dishes, such as mashed potatoes or rice.🌿🍚
