Ingredients

  • 4 Kuzu İncik (Lamb Shanks) 🍖
  • 2 tbsp Olive Oil 🫒
  • 1 large Onion, chopped 🧅
  • 2 Carrots, chopped 🥕
  • 2 Celery stalks, chopped
  • 4 cloves Garlic, minced 🧄
  • 1 tbsp Tomato Paste 🍅
  • 1 tbsp Red Pepper Paste (optional)
  • 1 cup Red Wine 🍷
  • 4 cups Lamb or Chicken Broth 🍲
  • 2 Bay Leaves 🍃
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • Salt 🧂 and Black Pepper 🌶️ to taste
  • Fresh Parsley, chopped (for garnish) 🌿

Instructions

  • Preheat oven to 320°F (160°C).🔥
  • Season lamb shanks with salt and pepper.🧂🌶️
  • Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.🫕
  • Sear lamb shanks on all sides until browned. Remove from pot and set aside.🥩
  • Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.🧅🥕
  • Add garlic and cook for another minute.🧄
  • Stir in tomato paste and red pepper paste (if using) and cook for 1 minute.🍅
  • Deglaze the pot with red wine, scraping up any browned bits from the bottom.🍷
  • Return lamb shanks to the pot. Place on top of vegetables.
  • Pour in lamb or chicken broth, ensuring the shanks are mostly submerged. 🍲
  • Add bay leaves, thyme, and rosemary.🍃
  • Bring to a simmer, then cover the pot and transfer to the preheated oven.♨️
  • Braise for 2.5-3 hours, or until the lamb is very tender and easily pulls away from the bone.⏰
  • Remove from oven and let rest for 10-15 minutes before serving.🍽️
  • Garnish with fresh parsley and serve with your favorite side dishes, such as mashed potatoes or rice.🌿🍚
