Ingredients
- Paratha 🫓 – 2, cut into strips
- 🧅 Onion – 1 medium, chopped
- 🍅 Tomato – 1 medium, chopped
- 🥕 Mixed Vegetables – 1 cup chopped (carrots, beans, peas)
- 🥚 Egg – 1 (optional)
- 🌶️ Green chilies – 1-2, chopped
- 🧄 Garlic – 2 cloves, minced
- Ginger-Garlic Paste – 1 tsp
- Garam Masala – 1/2 tsp
- Chili Powder – 1/2 tsp
- Coriander Leaves 🌿 – for garnish
- Oil – for cooking
Instructions
- 🔥 Heat oil in a large pan or griddle. Add onions and green chilies, sauté until golden brown.
- 🧄 Add ginger-garlic paste and sauté for a minute. Add tomatoes and cook until soft.
- 🥕 Add mixed vegetables and cook until they are partially cooked. Add egg (if using) and scramble it with the vegetables.
- 🧂 Add garam masala, chili powder, and salt to taste. Mix well.
- 🔪 Add the chopped paratha strips and mix everything together thoroughly. Cook for 5-7 minutes, continuously chopping and mixing with a spatula or metal spatulas.
- 🌿 Garnish with coriander leaves and serve hot.
