Ingredients

  • 🍜 Rice noodles – flat, wide
  • 🐔 Chicken – sliced or cubed
  • 🥥 Coconut milk – creamy
  • 🧅 Red onion – thinly sliced
  • 🍋 Lime – for serving
  • 🌶️ Chili paste – for flavor
  • 🌿 Coriander – for garnish
  • 🫘 Soy sauce – seasoning

Instructions

  • 🔥 Fry some of the noodles until crispy for garnish. Set aside.
  • 🥘 In a pot, simmer chicken in coconut milk with chili paste and soy sauce.
  • 🍜 Cook rice noodles separately until tender.
  • 🥣 Combine noodles and chicken coconut milk mixture in a bowl.
  • ✨ Garnish with crispy noodles, red onion, coriander, and a squeeze of lime. Serve hot!
