Ingredients
- 🍜 Rice noodles – flat, wide
- 🐔 Chicken – sliced or cubed
- 🥥 Coconut milk – creamy
- 🧅 Red onion – thinly sliced
- 🍋 Lime – for serving
- 🌶️ Chili paste – for flavor
- 🌿 Coriander – for garnish
- 🫘 Soy sauce – seasoning
Instructions
- 🔥 Fry some of the noodles until crispy for garnish. Set aside.
- 🥘 In a pot, simmer chicken in coconut milk with chili paste and soy sauce.
- 🍜 Cook rice noodles separately until tender.
- 🥣 Combine noodles and chicken coconut milk mixture in a bowl.
- ✨ Garnish with crispy noodles, red onion, coriander, and a squeeze of lime. Serve hot!
