Ingredients
- 🐔 Chicken Thighs – 1.5 lbs, boneless, skinless
- 🍜 Egg Noodles – 8 oz, dried
- 🥥 Coconut Milk – 2 cans (13.5 oz each)
- 🧅 Red Onion – 1, sliced
- 🌶️ Khao Soi Curry Paste – 4 tbsp
- 🍋 Lime – 1, cut into wedges
- 🌿 Cilantro – for garnish
- 🟡 Pickled Mustard Greens – for garnish
- 🔥 Chili Oil – for serving
Instructions
- 🔥 Sauté curry paste in oil until fragrant.
- 🐔 Add chicken and cook until browned.
- 🥥 Pour in coconut milk and simmer until chicken is cooked through.
- 🍜 Cook egg noodles separately.
- 🥣 Serve noodles in a bowl with chicken and broth. Garnish with red onion, pickled mustard greens, cilantro, lime wedge, and chili oil.
