Ingredients

  • 🐔 Chicken Thighs – 1.5 lbs, boneless, skinless
  • 🍜 Egg Noodles – 8 oz, dried
  • 🥥 Coconut Milk – 2 cans (13.5 oz each)
  • 🧅 Red Onion – 1, sliced
  • 🌶️ Khao Soi Curry Paste – 4 tbsp
  • 🍋 Lime – 1, cut into wedges
  • 🌿 Cilantro – for garnish
  • 🟡 Pickled Mustard Greens – for garnish
  • 🔥 Chili Oil – for serving

Instructions

  • 🔥 Sauté curry paste in oil until fragrant.
  • 🐔 Add chicken and cook until browned.
  • 🥥 Pour in coconut milk and simmer until chicken is cooked through.
  • 🍜 Cook egg noodles separately.
  • 🥣 Serve noodles in a bowl with chicken and broth. Garnish with red onion, pickled mustard greens, cilantro, lime wedge, and chili oil.
