Ingredients

  • 🍚 Rice – 1 cup, preferably Kerala Matta rice
  • 🥥 Coconut milk – 1 cup
  • 🧅 Onion – 1 medium, sliced
  • 🥕 Carrots – 1/2 cup, diced
  • 🫘 Green beans – 1/2 cup, chopped
  • 🥔 Potato – 1 medium, diced
  • 🌶️ Green chilies – 2, slit
  • 🌿 Curry leaves – 1 sprig
  • 🧄 Garlic – 2 cloves, minced
  • ✨ Turmeric powder – 1/2 tsp
  • 🌶️ Red chili powder – 1/2 tsp
  • 🌱 Coriander powder – 1 tsp
  • 🧂 Salt – to taste
  • 🥥 Coconut oil – 2 tbsp

Instructions

  • 🍚 Wash and soak the rice for 15 minutes.
  • 🔥 Heat coconut oil in a pan and sauté onions, garlic, green chilies, and curry leaves until golden brown.
  • 🥕 Add vegetables (carrots, green beans, potato) and sauté for 5 minutes.
  • ✨ Add turmeric powder, red chili powder, coriander powder, and salt. Sauté for another minute.
  • 🥥 Add coconut milk and rice. Bring to a boil, then reduce heat and simmer until the rice is cooked and the liquid is absorbed.
  • 🥘 Serve hot with your favorite Kerala-style side dishes.
