Ingredients
- 🍚 Rice – 1 cup, preferably Kerala Matta rice
- 🥥 Coconut milk – 1 cup
- 🧅 Onion – 1 medium, sliced
- 🥕 Carrots – 1/2 cup, diced
- 🫘 Green beans – 1/2 cup, chopped
- 🥔 Potato – 1 medium, diced
- 🌶️ Green chilies – 2, slit
- 🌿 Curry leaves – 1 sprig
- 🧄 Garlic – 2 cloves, minced
- ✨ Turmeric powder – 1/2 tsp
- 🌶️ Red chili powder – 1/2 tsp
- 🌱 Coriander powder – 1 tsp
- 🧂 Salt – to taste
- 🥥 Coconut oil – 2 tbsp
Instructions
- 🍚 Wash and soak the rice for 15 minutes.
- 🔥 Heat coconut oil in a pan and sauté onions, garlic, green chilies, and curry leaves until golden brown.
- 🥕 Add vegetables (carrots, green beans, potato) and sauté for 5 minutes.
- ✨ Add turmeric powder, red chili powder, coriander powder, and salt. Sauté for another minute.
- 🥥 Add coconut milk and rice. Bring to a boil, then reduce heat and simmer until the rice is cooked and the liquid is absorbed.
- 🥘 Serve hot with your favorite Kerala-style side dishes.
