Kataage Potato Kansai Dashi Shoyu

Ingredients

  • 2 medium potatoes ๐Ÿฅ”, peeled and thinly sliced
  • 1 tbsp vegetable oil ๐Ÿถ
  • 1/4 cup Kansai-style dashi ๐Ÿฒ
  • 2 tbsp soy sauce ๐Ÿถ
  • 1 tbsp mirin ๐Ÿถ
  • 1 tsp sugar ๐Ÿš
  • 1/4 tsp grated ginger ๐Ÿซš (optional)
  • Chopped green onions ๐Ÿง… for garnish (optional)

Instructions

  • Soak potato slices in water for 5 minutes to remove excess starch. Drain well. ๐Ÿšฟ
  • Heat vegetable oil in a frying pan over medium-high heat. ๐Ÿ”ฅ
  • Add potato slices to the pan in a single layer. Fry until golden brown and crispy, flipping occasionally. ๐Ÿณ
  • In a small saucepan, combine dashi, soy sauce, mirin, sugar, and ginger (if using). Bring to a simmer. ๐Ÿฒ
  • Once the potatoes are cooked, remove them from the pan and drain excess oil on a paper towel. ๐Ÿงป
  • Pour the dashi shoyu mixture over the fried potatoes. โ™จ๏ธ
