Kataage Potato Kansai Dashi Shoyu

Ingredients
- 2 medium potatoes ๐ฅ, peeled and thinly sliced
- 1 tbsp vegetable oil ๐ถ
- 1/4 cup Kansai-style dashi ๐ฒ
- 2 tbsp soy sauce ๐ถ
- 1 tbsp mirin ๐ถ
- 1 tsp sugar ๐
- 1/4 tsp grated ginger ๐ซ (optional)
- Chopped green onions ๐ง for garnish (optional)
Instructions
- Soak potato slices in water for 5 minutes to remove excess starch. Drain well. ๐ฟ
- Heat vegetable oil in a frying pan over medium-high heat. ๐ฅ
- Add potato slices to the pan in a single layer. Fry until golden brown and crispy, flipping occasionally. ๐ณ
- In a small saucepan, combine dashi, soy sauce, mirin, sugar, and ginger (if using). Bring to a simmer. ๐ฒ
- Once the potatoes are cooked, remove them from the pan and drain excess oil on a paper towel. ๐งป
- Pour the dashi shoyu mixture over the fried potatoes. โจ๏ธ
- Garnish with chopped green onions (if desired). ๐ง
- Serve immediately and enjoy! ๐
