Jok Prince’s century egg porridge

Ingredients
- 1 cup Thai jasmine rice 🍚
- 8 cups chicken broth 🐔
- 2 century eggs, quartered 🥚
- 1/2 cup ground pork or chicken 🐷/🐔
- 2-3 green onions, thinly sliced 🧅
- 1/4 cup ginger, julienned 🫚
- 1 tbsp soy sauce 🍶
- 1 tsp sesame oil 🫘
- Salt and white pepper to taste 🧂
- Optional toppings: fried garlic, cilantro 🌿, chili flakes 🌶️
Instructions
- Rinse the rice thoroughly.🍚
- In a large pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes, or until the rice breaks down and becomes a porridge consistency. 🥣
- While the porridge is cooking, marinate the ground pork/chicken with soy sauce and sesame oil. 🐷/🐔🍶🫘
- Once the porridge is cooked, add the marinated ground pork/chicken and ginger. Cook for another 5-7 minutes, or until the pork/chicken is cooked through. 🫚
- Season with salt and white pepper to taste. 🧂
- Stir in the century egg. 🥚
- Garnish with green onions and optional toppings such as fried garlic, cilantro, and chili flakes. 🧅🌿🌶️
- Serve hot. 🔥
