Ingredients
- 🍚 Cooked Rice – 2 cups
- 🥚 Eggs – 2 large
- 🐔 Chicken or Tofu – 1 cup, diced
- 🧅 Onion – 1/2 medium, sliced
- 🥕 Carrot – 1/2 medium, sliced
- 🍄 Mushrooms – 1/2 cup, sliced
- 🍶 Soy Sauce – 2 tbsp
- 🍯 Mirin – 1 tbsp
- 🌱 Green Onions – for garnish
Instructions
- 🧅 Sauté onions, carrots, and mushrooms in a pan until softened.
- 🐔 Add chicken or tofu and cook until browned.
- 🥣 Mix soy sauce and mirin, then pour over the mixture. Simmer for 5 minutes.
- 🍳 Gently pour beaten eggs over the mixture and cook until set but still slightly runny.
