Ingredients

  • 🍚 Cooked Rice – 2 cups
  • 🥚 Eggs – 2 large
  • 🐔 Chicken or Tofu – 1 cup, diced
  • 🧅 Onion – 1/2 medium, sliced
  • 🥕 Carrot – 1/2 medium, sliced
  • 🍄 Mushrooms – 1/2 cup, sliced
  • 🍶 Soy Sauce – 2 tbsp
  • 🍯 Mirin – 1 tbsp
  • 🌱 Green Onions – for garnish

Instructions

  • 🧅 Sauté onions, carrots, and mushrooms in a pan until softened.
  • 🐔 Add chicken or tofu and cook until browned.
  • 🥣 Mix soy sauce and mirin, then pour over the mixture. Simmer for 5 minutes.
  • 🍳 Gently pour beaten eggs over the mixture and cook until set but still slightly runny.
  • 🍚 Serve over warm rice and garnish with green onions. Enjoy! ✨
