Ingredients

  • 🍚 Basmati Rice – 1 cup
  • 🌱 Lentils – 1/2 cup (various types)
  • 🥕 Mixed Vegetables – 1 cup (carrots, peas, beans)
  • 🧅 Onion – 1 medium, chopped
  • 🍅 Tomatoes – 2 medium, chopped
  • 🧄 Ginger-Garlic Paste – 1 tbsp
  • 🌶️ Spices – Turmeric, cumin, coriander powder
  • 🌿 Fresh Coriander – for garnish
  • 💧 Water – as needed
  • 🥄 Oil – for cooking

Instructions

  • 🍚 Cook rice separately and keep warm.
  • 🌱 Cook lentils with water until soft. Set aside.
  • 🔥 Sauté onions, ginger-garlic paste until golden brown.
  • 🍅 Add tomatoes and spices; cook until the oil separates.
  • 🥕 Add mixed vegetables and cooked lentils; simmer until vegetables are tender.
  • 🌿 Garnish with fresh coriander and serve hot with rice.
