Ingredients
- 🍚 Basmati Rice – 1 cup
- 🌱 Lentils – 1/2 cup (various types)
- 🥕 Mixed Vegetables – 1 cup (carrots, peas, beans)
- 🧅 Onion – 1 medium, chopped
- 🍅 Tomatoes – 2 medium, chopped
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🌶️ Spices – Turmeric, cumin, coriander powder
- 🌿 Fresh Coriander – for garnish
- 💧 Water – as needed
- 🥄 Oil – for cooking
Instructions
- 🍚 Cook rice separately and keep warm.
- 🌱 Cook lentils with water until soft. Set aside.
- 🔥 Sauté onions, ginger-garlic paste until golden brown.
- 🍅 Add tomatoes and spices; cook until the oil separates.
- 🥕 Add mixed vegetables and cooked lentils; simmer until vegetables are tender.
- 🌿 Garnish with fresh coriander and serve hot with rice.
