Ingredients
- 2-3 veal trotters (paça)
- 2-3 beef marrow bones (ilikli kemik)
- 1 large onion 🧅
- 6-8 cloves garlic 🧄
- 1 carrot 🥕
- 1 stalk celery
- 1 bay leaf 🍃
- 10-12 black peppercorns
- Salt 🧂 to taste
- Water 💧
- For the Dressing:
- 4-5 cloves garlic 🧄, minced
- 1/4 cup white vinegar
- 1/4 cup lemon juice 🍋
- Red pepper flakes (optional)🌶️
- Dried mint (optional)🌿
Instructions
- Wash the veal trotters and beef marrow bones thoroughly. 🧼
- Place the trotters, marrow bones, onion, garlic, carrot, celery, bay leaf, and peppercorns in a large pot. 🍲
- Add enough water to cover the ingredients completely. 💧
- Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the trotters are very tender and the marrow is soft. Skim off any foam that rises to the surface. 🔥
- Remove the trotters and bones from the pot. Let them cool slightly. ⏳
- Strain the broth through a fine-mesh sieve. Discard the solids. 🗑️
- Remove the marrow from the bones. Shred the meat from the trotters, discarding any bones or cartilage. 🦴
- Return the broth to the pot. Add the shredded meat and marrow. 🥣
- Season with salt to taste. 🧂
- For the dressing, combine the minced garlic, white vinegar, and lemon juice in a small bowl. 🍋🧄
- To serve, ladle the soup into bowls. Drizzle with the garlic-vinegar dressing. Garnish with red pepper flakes and dried mint, if desired. 🌶️🌿
