İlikli Paça Çorbası

Ingredients

  • 2-3 veal trotters (paça)
  • 2-3 beef marrow bones (ilikli kemik)
  • 1 large onion 🧅
  • 6-8 cloves garlic 🧄
  • 1 carrot 🥕
  • 1 stalk celery
  • 1 bay leaf 🍃
  • 10-12 black peppercorns
  • Salt 🧂 to taste
  • Water 💧
  • For the Dressing:
  • 4-5 cloves garlic 🧄, minced
  • 1/4 cup white vinegar
  • 1/4 cup lemon juice 🍋
  • Red pepper flakes (optional)🌶️
  • Dried mint (optional)🌿

Instructions

  • Wash the veal trotters and beef marrow bones thoroughly. 🧼
  • Place the trotters, marrow bones, onion, garlic, carrot, celery, bay leaf, and peppercorns in a large pot. 🍲
  • Add enough water to cover the ingredients completely. 💧
  • Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the trotters are very tender and the marrow is soft. Skim off any foam that rises to the surface. 🔥
  • Remove the trotters and bones from the pot. Let them cool slightly. ⏳
  • Strain the broth through a fine-mesh sieve. Discard the solids. 🗑️
  • Remove the marrow from the bones. Shred the meat from the trotters, discarding any bones or cartilage. 🦴
  • Return the broth to the pot. Add the shredded meat and marrow. 🥣
  • Season with salt to taste. 🧂
  • For the dressing, combine the minced garlic, white vinegar, and lemon juice in a small bowl. 🍋🧄
  • To serve, ladle the soup into bowls. Drizzle with the garlic-vinegar dressing. Garnish with red pepper flakes and dried mint, if desired. 🌶️🌿
