Ingredients
- 🍚 Rice flour – 1 cup
- 🥥 Coconut milk – 1 cup
- 💧 Water – 1/2 cup
- 🥚 Egg – 1 (optional)
- 🧂 Salt – to taste
- 🥄 Sugar – 1 tsp
Instructions
- 🥣 In a bowl, mix rice flour, coconut milk, water, salt, and sugar to form a batter. Add an egg if desired.
- ⏳ Let the batter ferment for at least 3 hours or overnight for best results.
- 🔥 Heat a hopper pan or small wok. Grease it lightly with oil.
- 🥄 Pour a ladleful of batter into the pan and swirl to coat the sides.
- 🥚 If making egg hoppers, crack an egg into the center.
- ♨️ Cover and cook until the edges are crisp and the center is cooked through.
- 🍽️ Serve hot with curry or chutney.
