Homemade Mortadella

Ingredients

  • 🥩 Lean Pork – 1kg, chilled and cubed
  • 🥓 Pork Fat – 150g, cut into small cubes
  • 🥜 Pistachios – ½ cup, shelled and toasted
  • 🧂 Spices – salt, white pepper, nutmeg, and coriander
  • 🧊 Ice Water – ½ cup to maintain texture while blending

Instructions

  • 🥣 Blend the chilled pork and ice water into a very smooth, fine paste.
  • 🌿 Gently fold in the fat cubes, peppercorns, and pistachios by hand.
  • 🌯 Roll the meat mixture tightly into a large log using heat-safe plastic wrap.
  • 💧 Poach the log in low-simmering water until it reaches an internal temp of 70°C.
  • ❄️ Chill the mortadella in the fridge overnight before slicing thinly to serve.
