Ingredients
- 🥩 Lean Pork – 1kg, chilled and cubed
- 🥓 Pork Fat – 150g, cut into small cubes
- 🥜 Pistachios – ½ cup, shelled and toasted
- 🧂 Spices – salt, white pepper, nutmeg, and coriander
- 🧊 Ice Water – ½ cup to maintain texture while blending
Instructions
- 🥣 Blend the chilled pork and ice water into a very smooth, fine paste.
- 🌿 Gently fold in the fat cubes, peppercorns, and pistachios by hand.
- 🌯 Roll the meat mixture tightly into a large log using heat-safe plastic wrap.
- 💧 Poach the log in low-simmering water until it reaches an internal temp of 70°C.
- ❄️ Chill the mortadella in the fridge overnight before slicing thinly to serve.
