Ingredients
- 🥚 Egg yolks – 3 large
- 🍋 Lemon juice – 1 tbsp
- 🧈 Unsalted butter – 1/2 cup, melted
- 💧 Water – 1 tbsp
- 🧂 Salt – to taste
- 🌶️ Cayenne pepper – a pinch
Instructions
- 🥣 In a heatproof bowl, whisk egg yolks and water until pale.
- 🔥 Place bowl over simmering water (double boiler) and whisk constantly until thickened.
- 🧈 Slowly drizzle in melted butter while whisking continuously.
- 🍋 Whisk in lemon juice, salt, and cayenne pepper.
- ✨ Serve immediately over eggs Benedict, vegetables, or fish.
