Ingredients

  • 🍋 Lemon juice – 1 tbsp
  • 🧈 Unsalted butter – 1/2 cup, melted
  • 💧 Water – 1 tbsp
  • 🧂 Salt – to taste
  • 🌶️ Cayenne pepper – a pinch

Instructions

  • 🥣 In a heatproof bowl, whisk egg yolks and water until pale.
  • 🔥 Place bowl over simmering water (double boiler) and whisk constantly until thickened.
  • 🧈 Slowly drizzle in melted butter while whisking continuously.
  • 🍋 Whisk in lemon juice, salt, and cayenne pepper.
  • ✨ Serve immediately over eggs Benedict, vegetables, or fish.
