Ingredients
- 2 slices of whole grain bread 🍞
- 1 avocado, sliced 🥑
- 1 cup of mixed greens 🥗
- 1/2 cup of chickpeas, rinsed and drained 🥜
- 1/4 cup of grated carrot 🥕
- 1/4 cup of sliced cucumber 🥒
- 1/4 cup of cherry tomatoes, halved 🍅
- 1/4 cup of shredded cheese 🧀
- 1 tbsp of hummus 🥘
- Salt and pepper to taste 🧂
Instructions
- Spread hummus on one slice of bread 🥘
- Layer the avocado slices on top of the hummus 🥑
- Add the mixed greens 🥗
- Sprinkle the chickpeas on top of the greens 🥜
- Add the grated carrot, cucumber, and cherry tomatoes 🥕🥒🍅
- Sprinkle shredded cheese on top 🧀
- Season with salt and pepper 🧂
- Top with the other slice of bread 🍞
- Cut the sandwich in half and serve 🥪
