Ingredients

  • 2 slices of whole grain bread 🍞
  • 1 avocado, sliced 🥑
  • 1 cup of mixed greens 🥗
  • 1/2 cup of chickpeas, rinsed and drained 🥜
  • 1/4 cup of grated carrot 🥕
  • 1/4 cup of sliced cucumber 🥒
  • 1/4 cup of cherry tomatoes, halved 🍅
  • 1/4 cup of shredded cheese 🧀
  • 1 tbsp of hummus 🥘
  • Salt and pepper to taste 🧂

Instructions

  • Spread hummus on one slice of bread 🥘
  • Layer the avocado slices on top of the hummus 🥑
  • Add the mixed greens 🥗
  • Sprinkle the chickpeas on top of the greens 🥜
  • Add the grated carrot, cucumber, and cherry tomatoes 🥕🥒🍅
  • Sprinkle shredded cheese on top 🧀
  • Season with salt and pepper 🧂
  • Top with the other slice of bread 🍞
  • Cut the sandwich in half and serve 🥪
