Ingredients
- 🍝 Pasta – your favorite shape
- 🥦 Broccoli florets
- 🥕 Carrots – chopped
- 🧅 Onion – diced
- 🧄 Garlic – minced
- 🧀 Parmesan cheese – grated
Instructions
- 🥕 Preheat oven to 400°F (200°C). Toss veggies with olive oil, salt, and pepper. Roast until tender.
- 🍝 Cook pasta according to package directions. Reserve some pasta water.
- 🧅 While pasta cooks, sauté garlic and onions in olive oil until softened.
- 🥕 Add roasted veggies to the pan. Toss with cooked pasta and a little pasta water if needed.
- 🧀 Serve with grated Parmesan cheese and enjoy! ✨
