Ingredients

  • 🍝 Pasta – your favorite shape
  • 🥦 Broccoli florets
  • 🥕 Carrots – chopped
  • 🧅 Onion – diced
  • 🧄 Garlic – minced
  • 🧀 Parmesan cheese – grated

Instructions

  • 🥕 Preheat oven to 400°F (200°C). Toss veggies with olive oil, salt, and pepper. Roast until tender.
  • 🍝 Cook pasta according to package directions. Reserve some pasta water.
  • 🧅 While pasta cooks, sauté garlic and onions in olive oil until softened.
  • 🥕 Add roasted veggies to the pan. Toss with cooked pasta and a little pasta water if needed.
  • 🧀 Serve with grated Parmesan cheese and enjoy! ✨
