Ingredients
- 🦃 Ground Turkey – 1 lb
- 🌿 Fresh Herbs (parsley, oregano) – chopped
- 🧅 Onion – minced
- 🧄 Garlic – 2 cloves, minced
- 🥚 Egg – 1
- 🍞 Breadcrumbs – 1/2 cup
- 🍅 Cherry Tomatoes – halved
- 🥒 Cucumber – diced
- 🧅 Red Onion – thinly sliced
- 🫒 Kalamata Olives – pitted
- 🧀 Feta Cheese – crumbled
- 🍋 Lemon Juice – 2 tbsp
- 🫒 Olive Oil – 3 tbsp
Instructions
- 🥣 In a bowl, combine ground turkey, herbs, onion, garlic, egg, and breadcrumbs. Mix well and form into meatballs.
- 🔥 Heat olive oil in a pan and cook the meatballs until browned and cooked through.
- 🥗 In a separate bowl, combine cherry tomatoes, cucumber, red onion, and olives.
- 🍋 Drizzle with lemon juice and olive oil. Toss gently.
- 🍽️ Serve the herby turkey meatballs over the Greek salad and top with feta cheese.
