Ingredients

  • 🦃 Ground Turkey – 1 lb
  • 🌿 Fresh Herbs (parsley, oregano) – chopped
  • 🧅 Onion – minced
  • 🧄 Garlic – 2 cloves, minced
  • 🥚 Egg – 1
  • 🍞 Breadcrumbs – 1/2 cup
  • 🍅 Cherry Tomatoes – halved
  • 🥒 Cucumber – diced
  • 🧅 Red Onion – thinly sliced
  • 🫒 Kalamata Olives – pitted
  • 🧀 Feta Cheese – crumbled
  • 🍋 Lemon Juice – 2 tbsp
  • 🫒 Olive Oil – 3 tbsp

Instructions

  • 🥣 In a bowl, combine ground turkey, herbs, onion, garlic, egg, and breadcrumbs. Mix well and form into meatballs.
  • 🔥 Heat olive oil in a pan and cook the meatballs until browned and cooked through.
  • 🥗 In a separate bowl, combine cherry tomatoes, cucumber, red onion, and olives.
  • 🍋 Drizzle with lemon juice and olive oil. Toss gently.
  • 🍽️ Serve the herby turkey meatballs over the Greek salad and top with feta cheese.
