Ingredients
- 🍆 Small Eggplants (Gutti Vankaya) – slit and stuffed
- 🍚 Basmati Rice – soaked for 30 mins
- 🧅 Onions – finely chopped
- 🍅 Tomatoes – chopped
- 🌶️ Green Chillies – slit
- 🌿 Coriander Leaves – chopped
- 🥜 Peanuts – roasted
- 🥥 Coconut – grated
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🫙 Pulao Masala – 2 tbsp
Instructions
- 🔥 Heat oil in a pressure cooker or pot, add onions and sauté until golden brown.
- 🌶️ Add ginger-garlic paste, green chilies and sauté for a minute, then add tomatoes and cook until soft.
- 🍆 Add stuffed eggplants and cook for 5-7 minutes, stirring gently.
- 🍚 Add soaked rice, pulao masala, salt, and water (as needed for rice), bring to a boil.
- 🍚 Reduce heat, cover and cook until rice is done. Garnish with coriander, peanuts, and coconut before serving. ✨
