Ingredients

  • 🍆 Small Eggplants (Gutti Vankaya) – slit and stuffed
  • 🍚 Basmati Rice – soaked for 30 mins
  • 🧅 Onions – finely chopped
  • 🍅 Tomatoes – chopped
  • 🌶️ Green Chillies – slit
  • 🌿 Coriander Leaves – chopped
  • 🥜 Peanuts – roasted
  • 🥥 Coconut – grated
  • 🧄 Ginger-Garlic Paste – 1 tbsp
  • 🫙 Pulao Masala – 2 tbsp

Instructions

  • 🔥 Heat oil in a pressure cooker or pot, add onions and sauté until golden brown.
  • 🌶️ Add ginger-garlic paste, green chilies and sauté for a minute, then add tomatoes and cook until soft.
  • 🍆 Add stuffed eggplants and cook for 5-7 minutes, stirring gently.
  • 🍚 Add soaked rice, pulao masala, salt, and water (as needed for rice), bring to a boil.
  • 🍚 Reduce heat, cover and cook until rice is done. Garnish with coriander, peanuts, and coconut before serving. ✨
