Ingredients
- 🍆 Small Brinjals (Eggplants) – 8-10 pieces, slit crosswise
- 🥜 Peanuts – 1/4 cup, roasted
- 🥥 Dry Coconut – 2 tbsp, grated
- 🌰 Sesame Seeds – 1 tbsp, toasted
- 🧅 Onion – 1 large, finely chopped
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🌶️ Red Chili Powder & Turmeric – for heat and color
- 🥣 Tamarind Paste – 1 tbsp for tanginess
- 🌿 Curry Leaves – a handful for aroma
Instructions
- 🥜 Roast peanuts, sesame seeds, and coconut, then grind them with spices into a thick stuffing paste.
- 🍆 Carefully stuff the slit eggplants with the prepared masala paste and set aside.
- 🔥 Heat oil in a pan, sauté onions and curry leaves until golden brown.
- 🥘 Add the stuffed eggplants and any leftover paste, cover, and cook on low heat until tender.
- ✨ Stir in tamarind pulp and simmer until the gravy thickens and oil separates from the sides.
