Granny’s Cheesecake

Ingredients
- 1 ½ cups graham cracker crumbs 🍪
- ⅓ cup granulated sugar 🍚
- 6 tablespoons unsalted butter, melted 🧈
- 4 (8-ounce) packages cream cheese, softened 🧀
- 1 ¾ cups granulated sugar 🍚
- 2 teaspoons vanilla extract 🍦
- 4 large eggs 🥚
- 1 cup sour cream 🥛
Instructions
- Preheat oven to 350°F (175°C). 🌡️
- In a bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan. 🥣
- Bake crust for 8 minutes. Let cool slightly. ⏳
- In a large bowl, beat cream cheese and 1 ¾ cups sugar until smooth. 🥄
- Beat in vanilla extract. Add eggs one at a time, beating well after each addition. Gently stir in sour cream. 🥚
- Pour batter over crust. 🥣
- Bake for 55-70 minutes, or until center is just slightly jiggly. ⏲️
- Turn off oven and let cheesecake cool in oven for 1 hour with the door slightly ajar. 🚪
- Refrigerate for at least 6 hours, or preferably overnight. ❄️
- Run a thin knife around the edge of the pan before releasing the springform. 🔪
