Ingredients
- 1 lb Chicken or Beef (diced) 🐔/🐄
- 1 tbsp Ginger-Garlic Paste 🧄
- 1 tsp Turmeric Powder 💛
- 1 tsp Chili Powder 🌶️
- 1 tsp Coriander Powder 🌱
- 1 can (13.5 oz) Coconut Milk 🥥🥛
- 1 cup Chickpea Flour (Besan) 🥣
- 4 cups Chicken Broth 🍜
- 2 tbsp Fish Sauce 🐟
- 1 tbsp Soy Sauce 🍶
- Salt and Pepper to taste 🧂
- Oil for cooking 🛢️
- 1 lb Egg Noodles 🍜🥚
- Toppings: Fried Garlic 🧄, Fried Onions 🧅, Hard Boiled Eggs (sliced) 🥚, Green Onions (chopped) 🌿, Cilantro (chopped) 🌿, Chili Flakes 🌶️, Lime Wedges 🍋
Instructions
- Marinate the meat with ginger-garlic paste, turmeric, chili powder, coriander powder, salt and pepper. Let it sit for at least 30 minutes. ⏰
- Heat oil in a large pot and sauté the marinated meat until browned. 🔥
- Add coconut milk, chicken broth, fish sauce, and soy sauce. Bring to a simmer. 🍲
- In a separate bowl, whisk chickpea flour with some water to form a smooth paste. Gradually add it to the simmering curry, stirring constantly to avoid lumps. 🥣
- Cook for about 1 hour ⏰, or until the curry has thickened and the meat is tender. Adjust salt and pepper to taste. 🧂
- While the curry is simmering, cook the egg noodles according to package directions. Drain and set aside. 🍜
- To serve, place a portion of noodles in a bowl and ladle the hot curry over it. 🍜🍛
- Top with fried garlic, fried onions, hard-boiled eggs, green onions, cilantro, chili flakes, and a squeeze of lime juice. 🧅🥚🌿🌶️🍋
