Ingredients
- 1 lb White Fish Fillets (Cod, Haddock, or Tilapia)
- 1 tbsp Olive Oil 🫒
- 1/2 Onion, chopped 🧅
- 2 cloves Garlic, minced 🧄
- 1 cup Long-Grain Rice 🍚
- 2 cups Chicken Broth 🐔
- 1/2 tsp Dried Thyme
- 1/4 tsp Salt 🧂
- 1/4 tsp Black Pepper
- 1 Lemon, sliced 🍋
Instructions
- Preheat oven to 375°F (190°C).
- In an oven-safe dish, heat olive oil over medium heat. Sauté onion and garlic until softened. 🧅🧄
- Add rice and stir to coat. Pour in chicken broth, thyme, salt, and pepper. Bring to a simmer. 🍚🐔
- Place fish fillets on top of the rice. Arrange lemon slices over the fish. 🐟🍋
- Cover the dish and bake for 25-30 minutes, or until the fish is cooked through and the rice is tender. 🔥
- Let stand for 5 minutes before serving. Enjoy! 🍽️
