Ingredients
- 1 lb Chicken, boneless, skinless, cut into cubes 🐔
- 1 large Onion, finely chopped 🧅
- 2 cloves Garlic, minced 🧄
- 1 inch Ginger, grated 🥕
- 1 tsp Turmeric powder 💛
- 1 tsp Red chili powder 🌶️
- 1 tsp Coriander powder 🌱
- 1 tsp Cumin powder
- 1 can (13.5 oz) Coconut milk 🥥🥛
- 4 cups Chicken broth 🍲
- 2 tbsp Vegetable oil 🛢️
- Salt to taste 🧂
- 1 lb Egg noodles 🍜
- Toppings: Fried garlic, chopped cilantro 🌿, chopped green onions, lime wedges 🍋, hard-boiled eggs 🥚, fried onions, chili flakes
Instructions
- Heat oil in a large pot. Add onions and sauté until golden brown. 🧅
- Add garlic and ginger, sauté for another minute. 🧄🥕
- Add chicken and cook until browned. 🐔
- Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well. 💛🌶️🌱
- Pour in coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes. 🥥🥛🍲
- Season with salt to taste. 🧂
- Cook egg noodles according to package directions. 🍜
- Serve noodles in a bowl, pour the chicken curry over the noodles, and garnish with desired toppings. 🌿🍋🥚
