Grandma’s Famous Khowsuey

Ingredients

  • 1 lb Chicken, boneless, skinless, cut into cubes 🐔
  • 1 large Onion, finely chopped 🧅
  • 2 cloves Garlic, minced 🧄
  • 1 inch Ginger, grated 🥕
  • 1 tsp Turmeric powder 💛
  • 1 tsp Red chili powder 🌶️
  • 1 tsp Coriander powder 🌱
  • 1 tsp Cumin powder
  • 1 can (13.5 oz) Coconut milk 🥥🥛
  • 4 cups Chicken broth 🍲
  • 2 tbsp Vegetable oil 🛢️
  • Salt to taste 🧂
  • 1 lb Egg noodles 🍜
  • Toppings: Fried garlic, chopped cilantro 🌿, chopped green onions, lime wedges 🍋, hard-boiled eggs 🥚, fried onions, chili flakes

Instructions

  • Heat oil in a large pot. Add onions and sauté until golden brown. 🧅
  • Add garlic and ginger, sauté for another minute. 🧄🥕
  • Add chicken and cook until browned. 🐔
  • Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well. 💛🌶️🌱
  • Pour in coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes. 🥥🥛🍲
  • Season with salt to taste. 🧂
  • Cook egg noodles according to package directions. 🍜
  • Serve noodles in a bowl, pour the chicken curry over the noodles, and garnish with desired toppings. 🌿🍋🥚
