Gongura chicken with Bagara

Ingredients
- 🍗 Chicken – 500g, curry cut pieces
- 🍃 Gongura leaves – 2 bunches, cleaned and sorted
- 🍚 Basmati Rice – 2 cups, soaked
- 🧅 Onions – 2 large, sliced
- 🧄 Ginger-Garlic paste – 2 tbsp
- 🌶️ Green chilies – 4-5, slit
- 🌿 Mint & Coriander – handful, fresh
- 🧈 Ghee/Oil – 4 tbsp
- 🧂 Whole Spices – Cloves, cardamom, cinnamon, and bay leaf
- 🥘 Spices – Turmeric, chili powder, and salt to taste
Instructions
- 🍀 Boil gongura leaves with a little water until soft, then mash into a smooth paste.
- 🍗 Sauté onions and ginger-garlic paste, then add chicken and spices, cooking until the meat is tender.
- 🥘 Stir the gongura paste into the chicken and simmer until the oil separates and flavors meld.
- 🍚 For Bagara: Sauté whole spices and onions in ghee, add rice and water, and cook until fluffy.
- ✨ Serve the tangy gongura chicken hot alongside the aromatic bagara rice for a complete meal.
