Ingredients
- 🥚 Egg yolks – 6 large
- 🥛 Heavy cream – 2 cups
- 🫚 Fresh ginger – 2 tbsp grated
- 🍬 Sugar – ½ cup + more for topping
- 🧂 Pinch of salt
- 💧 Vanilla extract – 1 tsp
Instructions
- 🔥 Preheat oven to 325°F (160°C).
- 🥣 Whisk together egg yolks, sugar, and salt in a bowl.
- 🥛 Heat cream and ginger in a saucepan until simmering; remove from heat and let steep for 15 minutes.
- 🥄 Gradually whisk the warm cream into the egg mixture, then stir in vanilla extract.
- 🍮 Pour the custard into ramekins, place in a baking pan, and add hot water to reach halfway up the sides. Bake for 30-35 minutes, or until set. Cool, then refrigerate.
- ✨ Before serving, sprinkle sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
