Ingredients

  • 1 roll of shortcrust pastry 🥧
  • 1 liter of whole milk 🥛
  • 200g of sugar 🍚
  • 4 large eggs 🥚
  • 80g of cornstarch (maizena) 🌽
  • 1 vanilla bean (or 1 tsp vanilla extract) 🌿

Instructions

  • Preheat oven to 180°C (350°F). 🔥
  • Line a 24cm tart tin with the shortcrust pastry. 🔪
  • In a saucepan, heat the milk and vanilla bean (if using) over medium heat. 🌡️
  • In a bowl, whisk together the sugar, eggs, and cornstarch until smooth. 🥣
  • Remove the vanilla bean (if using). Slowly pour the hot milk into the egg mixture, whisking constantly to prevent lumps. 🥛➡️🥣
  • Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the cream thickens and comes to a boil. 🥄
  • Remove from heat and pour the cream into the prepared pastry case. 🍮
  • Bake for 50-60 minutes, or until the pastry is golden brown and the filling is set but still slightly wobbly. ⏲️
  • Let cool completely before serving. Chill in the refrigerator for at least 2 hours before serving. ❄️
