Ingredients
- 🐟 Fish fillets – 1 lb, cut into chunks
- 🧅 Onion – 1 medium, chopped
- 🥕 Carrots – 1 cup, sliced
- 🥔 Potatoes – 2 medium, cubed
- 🌿 Celery – 1/2 cup, chopped
- 🍅 Diced Tomatoes – 1 can (14.5 oz)
- 🍋 Lemon – 1, juiced
- 🧄 Garlic – 2 cloves, minced
- 🌿 Fresh parsley – for garnish
- 💧 Fish broth – 6 cups
- 🧂 Salt & pepper – to taste
Instructions
- 🔥 Sauté onions, carrots, and celery in a pot until softened.
- 🧄 Add garlic and cook for another minute until fragrant.
- 🍅 Stir in diced tomatoes, potatoes, and fish broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- 🐟 Add fish and cook until it's flaky and cooked through (about 5-7 minutes).
- 🍋 Stir in lemon juice, season with salt and pepper, and garnish with fresh parsley. Serve hot. ✨
