Ingredients

  • 🍝 Pasta – 200g (like tagliatelle or pappardelle)
  • 🥓 Pancetta – 50g, diced
  • 🧅 Onion – ½ medium, finely chopped
  • 🍷 White Wine – ½ cup
  • 🧀 Parmesan Cheese – grated, for serving
  • 🌿 Fresh Herbs – parsley or basil, for garnish

Instructions

  • 💧 Cook pasta according to package directions. Reserve some pasta water.
  • 🥓 In a pan, sauté pancetta until crispy. Add onion and cook until softened.
  • 🍷 Deglaze the pan with white wine and let it reduce slightly.
  • 🍝 Add cooked pasta to the pan and toss to coat. Add a little pasta water if needed.
  • 🧀 Serve immediately, garnished with grated Parmesan cheese and fresh herbs.
