Ingredients
- 🍝 Pasta – 200g (like tagliatelle or pappardelle)
- 🥓 Pancetta – 50g, diced
- 🧅 Onion – ½ medium, finely chopped
- 🍷 White Wine – ½ cup
- 🧀 Parmesan Cheese – grated, for serving
- 🌿 Fresh Herbs – parsley or basil, for garnish
Instructions
- 💧 Cook pasta according to package directions. Reserve some pasta water.
- 🥓 In a pan, sauté pancetta until crispy. Add onion and cook until softened.
- 🍷 Deglaze the pan with white wine and let it reduce slightly.
- 🍝 Add cooked pasta to the pan and toss to coat. Add a little pasta water if needed.
- 🧀 Serve immediately, garnished with grated Parmesan cheese and fresh herbs.
