Ingredients
- 🔴 Red lentils – 1 cup
- 🍚 Rice – 2 tbsp
- 🥣 Bulgur – 2 tbsp
- 🧅 Onion – 1 medium, chopped
- 🧄 Garlic – 2 cloves, minced
- 🍅 Tomato paste – 2 tbsp
- 🌶️ Red pepper flakes – 1 tsp
- 🌿 Dried mint – 1 tsp
- 💧 Broth – 6 cups (vegetable or chicken)
- 🍋 Lemon – for serving (optional)
Instructions
- 🔥 Sauté onions and garlic in oil until softened.
- 🍅 Stir in tomato paste, red pepper flakes, and dried mint. Cook for 1 minute.
- 🥣 Add lentils, rice, bulgur, and broth. Bring to a boil.
- 🥘 Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- 🍋 Serve hot with a squeeze of lemon juice if desired.
