Entrecôte with frites

Ingredients

  • 2 Entrecôte steaks 🥩
  • 1 kg Potatoes 🥔
  • Vegetable oil for frying 🛢️
  • Salt 🧂
  • Black pepper 🌶️
  • Optional: Garlic 🧄
  • Optional: Herbs (thyme, rosemary) 🌿

Instructions

  • Peel and cut the potatoes into fries. 🔪🥔
  • Soak the fries in cold water for 30 minutes. 💧
  • Dry the fries thoroughly with paper towels. 🧻
  • Heat the oil in a deep fryer or large pot to 160°C (320°F). 🔥
  • Fry the fries in batches until pale and soft (5-7 minutes). ⏲️
  • Remove the fries and let them drain on paper towels. ♨️
  • Increase the oil temperature to 190°C (375°F). 🔥
  • Fry the fries again until golden brown and crispy (2-3 minutes). ⏲️
  • Season with salt. 🧂
  • Let the steaks come to room temperature. 🌡️
  • Season the steaks with salt, pepper, and optional garlic and herbs. 🧂🌶️🌿
  • Heat a pan over high heat. 🔥
  • Sear the steaks for 2-3 minutes per side for medium-rare, or longer for desired doneness. 🥩
  • Let the steaks rest for 5 minutes before slicing. ⏱️
  • Serve the entrecôte with the frites. 🍽️
