Ingredients
- 2 Entrecôte steaks 🥩
- 1 kg Potatoes 🥔
- Vegetable oil for frying 🛢️
- Salt 🧂
- Black pepper 🌶️
- Optional: Garlic 🧄
- Optional: Herbs (thyme, rosemary) 🌿
Instructions
- Peel and cut the potatoes into fries. 🔪🥔
- Soak the fries in cold water for 30 minutes. 💧
- Dry the fries thoroughly with paper towels. 🧻
- Heat the oil in a deep fryer or large pot to 160°C (320°F). 🔥
- Fry the fries in batches until pale and soft (5-7 minutes). ⏲️
- Remove the fries and let them drain on paper towels. ♨️
- Increase the oil temperature to 190°C (375°F). 🔥
- Fry the fries again until golden brown and crispy (2-3 minutes). ⏲️
- Season with salt. 🧂
- Let the steaks come to room temperature. 🌡️
- Season the steaks with salt, pepper, and optional garlic and herbs. 🧂🌶️🌿
- Heat a pan over high heat. 🔥
- Sear the steaks for 2-3 minutes per side for medium-rare, or longer for desired doneness. 🥩
- Let the steaks rest for 5 minutes before slicing. ⏱️
- Serve the entrecôte with the frites. 🍽️
